Hefeweizen
CH Evans offers a true Bavarian-style wheat beer. Our specialty wheat yeast strain produces fruity esters and spicy phenols reminiscent of bananas and cloves. Our Hefe has a very light body and lively mouthfeel, and while the ester and penol characteristics are certainly present it is somewhat subtle and very pleasant. German wheat beers are called weizen (“wheat”) in the western (Baden-Württemberg) and northern regions, and weissbier or weiss (“white beer” or “white”) in Bavaria. Hefeweizen (the prefix “hefe” is German for yeast) is the name for unfiltered wheat beers, while kristallweizen (“kristall” being German for crystal) is the same beer filtered. Bavarian-style wheat beer is usually served in 500 ml, vase-shaped glasses.
Breweries in other countries, particularly the U.S. and Canada, will brew wheat beers based on these two main traditions using special wheat beer yeasts; however, other varieties of wheat beer are also brewed with ordinary ale yeast, which produces a less fruity taste than the Bavarian styles. Sour beers such as Berliner Weisse, gose, and lambic are made with a significant proportion of wheat.
